Kwanyuen's research is in the area of plant biochemistry. Research emphasis is to determine the biochemical basis for genetic alteration of protein and oil content or quality in soybean. This approach requires a systematic evaluation of experimental lines derived through plant breeding to identify metabolic events in protein and oil synthetic pathways that influence or affect expression of trait in soybean seed. His research interests include protein purification, analysis, synthesis, chemistry, functionality, and metabolic regulation of the amount or composition of soybean storage proteins.

His diversified research interest in protein chemistry has led to collaboration with a food scientist in a project on functionality and food applications of protein isolates commercially manufactured from high protein soybean varieties. Fully understanding of protein functionality would assist in adjustment of primary processing conditions so that optimum functional performance of soy isolates could be obtained. Kwanyuen is also collaborating with other faculty members at NCSU in a project on tobacco research for medicinal purposes.
